That is true, Nissan constantly redefines what the SOC is.. and then redefines it again and displays it as the GOM 
Since Nissan uses their calculated SOC to control charging (I think) then charging to 80% will be constantly dropping in energy as the pack ages. Personally I would charge to a set voltage, adjusted by pack temperature, much simpler than charging to a preset energy level.
Dont confuse GIDs as SOC, but its a close enough approximation for our uses as long as you adjust for degradation over the years.
