Has anybody done research / checked the Leaf to see if we are getting exposed to unsafe levels of EM energy
 
That's a bit of a loaded question as there is no commonly recognized level that has been conclusively determined to be "unsafe".

I would naturally expect there to be measurable fields inside the car that are higher than background levels. I'm also vaguely curious what that number is.
 
There's a long thread on this already including some in-car measurements. There isn't enough data to definitively show a problem from EMF. That's good, because it means that if there is a problem, it's very small compared to other risks that come with just being alive.

Ham Radio has EMF radiation standards for harmful levels of exposure, usually around antennas.

Distance (usually squared) is a big factor, so a cell-phone, held next to your head, is probably "high" exposure. I expect that there ARE some safety standards there.
